Located in Ferndale, Michigan, the Patchwork Culinary Project is a new venture by chef Nikita Sanches, known for his acclaimed restaurant Rock City Eatery. The project aims to uplift immigrant chefs in Metro Detroit by providing culinary training and fundraising opportunities for their food businesses. Sanches envisions hosting monthly dinners showcasing global cuisines to support emerging chefs.
Set to open this spring, Patchwork Culinary Project will offer globally-inspired sandwiches, small plates, and a small market featuring goods from local bakeries and suppliers. Inspired by diverse import markets in the area, the project seeks to celebrate the rich immigrant culture of Metro Detroit and introduce new culinary experiences to patrons.
Sanches, a Russian-born chef who recently became a U.S. citizen, plans to incorporate some of his signature dishes like macaroni and cheese and freshly baked pies at the new establishment. Having started his business as Rock City Pies in Ferndale’s Rust Belt Market, Sanches views the launch of Patchwork Culinary Project as a return to his roots, completing a full circle in his culinary journey.
The concept behind the name “Patchwork” stems from Sanches’ naturalization ceremony experience, where the judge likened the U.S. to a quilt made of diverse patches, rather than a melting pot where everyone blends into sameness. This analogy resonated with Sanches, inspiring him to integrate it into his new project.
While the space undergoes renovations, Sanches is actively involved in transforming the location into a vibrant culinary hub. Although the dining room and concept will differ from its predecessor, Hilton Road Cafe, the kitchen’s core elements will remain intact, preserving a sense of continuity in the space’s culinary legacy.
As Patchwork Culinary Project nears its opening in late May or early June, Sanches has initiated a website where supporters can contribute to the nonprofit mission through donations or merchandise purchases. The project’s emphasis on empowering immigrant chefs and promoting cultural diversity reflects a broader trend in the culinary industry towards inclusivity and community engagement.
